A vanilla sponge with a real strawberry buttercream… Sound good to you?
I made these cupcakes as a friend asked for 19 cupcakes for their son’s birthday, happy to help, I agreed I’d do them, and these were one for the four delicious flavors!
Stay tuned for more! The sponge is a simple vanilla sponge recipe.. and the buttercream, well, the buttercream was improvised.
I’d searched everywhere for a recipe for strawberry buttercream, and all the recipes called for slicing, dicing, softening and blending the strawberries.. and I couldn’t really do with the hassle!
So I improvised. And substituted themshed strawberries for… strawberry jam! Yep, you heard right. Strawberry Jam! And it worked perfectly!
Recipe: (Should ice 10 cupcakes)
1 Stick of unsalted butter
1 heaped table spoon of strawberry jam
2 cups of icing sugar
Method:
- Add the butter to a large bowl and blend it for 5 minutes until light and fluffy! (The colour should change from a rich yellow to a creamy pale yellow)
- Add the icing sugar a little at a time into the mix until incorporated.
- Put the table spoon of jam into the mix and blend again until it is mixed thoroughly.
- voila! Perfect strawberry buttercream – bound to impress!
